  • 1½ cups granulated sugar
  • Zest of 3 small lemons (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, melt the butter and let it cool slightly.
  3. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  4. In a large bowl, combine granulated sugar and lemon zest until well mixed. Add melted butter and mix well. Then incorporate the egg, egg yolk, and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients until just combined. Gently fold in blueberries.
  6. Using a medium cookie scoop, drop dough onto the prepared baking sheet about three inches apart.
  7. Bake for 10-12 minutes until edges are set and lightly golden brown. Cool for a few minutes before transferring to a rack.
