- 1½ cups granulated sugar
- Zest of 3 small lemons (or 2 large lemons)
- 1 cup unsalted butter, melted
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a small bowl, melt the butter and let it cool slightly.
- In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
- In a large bowl, combine granulated sugar and lemon zest until well mixed. Add melted butter and mix well. Then incorporate the egg, egg yolk, and vanilla extract.
- Gradually add dry ingredients to wet ingredients until just combined. Gently fold in blueberries.
- Using a medium cookie scoop, drop dough onto the prepared baking sheet about three inches apart.
