  • 3 tbsp olive oil (for marinade)
  • 1/3 cup lime juice
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon smoked paprika
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 tbsp olive oil (for cooking)
  • 2 tbsp olive oil (for veggies)
  • 3 bell peppers (various colors), sliced
  • 1 large onion, sliced
  • 12 oz cauliflower rice (frozen or fresh)
  • Sea salt, to taste
  • Fresh lime juice
  • Avocado or guacamole
  • Dairy-free sour cream
  • Fresh salsa
  • Fresh cilantro

Instructions

  1. In a large bowl, whisk together olive oil, lime juice, minced garlic, and spices to make the marinade. Add flank steak and coat well. Cover and marinate in the fridge for at least 2 hours.
  2. Remove steak from the fridge 20 minutes before cooking; pat dry and season with sea salt.
  3. Heat a cast iron skillet over high heat with olive oil and sear the steak for about 4 minutes on each side until medium rare. Let it rest for 10 minutes before slicing.
  4. In the same skillet, add more olive oil and sauté sliced bell peppers until tender.
  5. Cook cauliflower rice in another pan with olive oil until heated through. Season with salt and lime juice.
  6. Assemble by layering cauliflower rice, sliced steak, sautéed veggies, and your choice of toppings.
