Instructions
- Prepare the raspberry swirl by simmering raspberries, sugar, and lemon juice until thickened. Strain to remove seeds and set aside.
- Preheat oven to 325°F (163°C).
- Make the crust by combining graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and bake for 8–10 minutes until golden brown.
- In a bowl, beat cream cheese until smooth. Gradually mix in sugar, then add sour cream, lemon zest, lemon juice, and vanilla extract. Incorporate eggs one at a time.
- Pour filling over cooled crust. Add dollops of raspberry sauce and swirl gently with a knife.
- Bake for 55–65 minutes or until set but slightly jiggly in the center. Turn off the oven and let cool inside for an hour.
