- 320 g mango pulp
- 100 g granulated sugar
- 3 tablespoons wild mango balsamic star
- 40 g cornstarch
- 4 tablespoons wild mango balsamic star
- 4 tablespoons mango pulp
- 4 tablespoons hot water
- 600 g vegan cream cheese (cold)
- 120 g vegan Greek-style yogurt (cold)
- ½ teaspoon vanilla extract
- 30 g powdered sugar
- 500 g vegan cookies
- 2 fresh mangoes (finely diced)
Instructions
- In a bowl, mix mango pulp, sugar, and wild mango balsamic star until smooth.
- Whisk cornstarch, additional mango balsamic star, mango pulp, and hot water in another bowl until lump-free. Fold into the first mixture.
- In a separate bowl, beat vegan cream cheese, yogurt, vanilla extract, and powdered sugar until fluffy.
- Gently combine both mixtures.
- Soak cookies briefly in diluted balsamic star and layer them at the bottom of your dish.
- Spread half of the cream mixture over cookies and add half of the diced mango.
- Repeat with another layer of soaked cookies followed by remaining cream mixture and diced mango.
- Chill in the refrigerator for at least two hours before serving.
