  • 1/4 cup sun-dried tomatoes
  • Dried oregano
  • Dried basil
  • Dried thyme
  • 2 tablespoons lemon juice
  • Optional: feta cheese and fresh parsley

Instructions

  1. Prepare ingredients by washing and chopping the vegetables and chicken.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and season lightly; cook until golden brown (5-7 minutes).
  3. Add zucchini, red bell pepper, red onion, cherry tomatoes, olives, sun-dried tomatoes, and minced garlic to the skillet. Stir-fry for another 5-7 minutes until veggies are tender yet crisp.
