- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup plain Greek yogurt
- Juice of 1 lemon
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely chopped
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 8 small corn tortillas or soft taco shells
- Chopped fresh parsley for garnish
Instructions
- Marinate the chicken by mixing olive oil, garlic, oregano, cumin, salt, and pepper in a bowl. Coat the chicken well and let it marinate for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat and cook the marinated chicken for about 6–7 minutes per side until fully cooked. Let it rest before slicing thinly.
- In a small bowl, combine Greek yogurt and lemon juice to create the tangy sauce.
- Mix diced tomatoes, cucumber, red onion, olives, and feta in another bowl to prepare the salad topping.
- Warm the corn tortillas briefly on a skillet before assembling your tacos: place sliced chicken on each tortilla, drizzle with yogurt sauce, and top with salad mixture.
- Garnish with fresh parsley and serve immediately.
