Mediterranean Chicken Tacos are a delicious and healthy twist on a classic favorite, perfect for any occasion. These vibrant tacos feature marinated chicken, crisp veggies, and a zesty yogurt sauce, all wrapped in warm tortillas.

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • Juice of 1 lemon
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 8 small corn tortillas or soft taco shells
  • Chopped fresh parsley for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, garlic, oregano, cumin, salt, and pepper in a bowl. Coat the chicken well and let it marinate for at least 30 minutes.
  2. Preheat a grill or skillet over medium-high heat and cook the marinated chicken for about 6–7 minutes per side until fully cooked. Let it rest before slicing thinly.
  3. In a small bowl, combine Greek yogurt and lemon juice to create the tangy sauce.
  4. Mix diced tomatoes, cucumber, red onion, olives, and feta in another bowl to prepare the salad topping.
  5. Warm the corn tortillas briefly on a skillet before assembling your tacos: place sliced chicken on each tortilla, drizzle with yogurt sauce, and top with salad mixture.
  6. Garnish with fresh parsley and serve immediately.
