Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. In an ovenproof skillet, heat olive oil over medium-high heat; sear chicken for 3-4 minutes per side until golden brown.
  4. Remove chicken; sauté red onion and garlic in the same skillet for 2 minutes.
  5. Stir in artichokes and olives; cook for another 2 minutes.
  6. Add chicken broth, white wine (if using), lemon juice, and zest; bring to simmer.
  7. Return chicken to the skillet; spoon sauce over it.
  8. Bake for 20-25 minutes until cooked through.
