  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 celery sticks, chopped
  • 4 cloves garlic, minced
  • 28 oz diced tomatoes
  • 4 cups beef broth
  • 2 potatoes, cut into chunks
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • salt
  • pepper

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Heat olive oil and sauté onions and celery until softened (3-4 minutes). Add garlic and cook for another minute.
  2. Add ground beef; brown for 5-6 minutes while breaking it up. Drain excess fat if necessary.
  3. Stir in tomato paste, then add diced tomatoes, beef broth, potatoes, Italian seasoning, salt, and pepper.
  4. Seal the lid and set to ‘Manual’ mode at high pressure for 8 minutes. Allow for a natural release of pressure for about 5 minutes before releasing any remaining pressure.
  5. Open the lid carefully, stir well, adjust seasoning if needed, and serve warm.
