Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 celery sticks, chopped
- 4 cloves garlic, minced
- 28 oz diced tomatoes
- 4 cups beef broth
- 2 potatoes, cut into chunks
- 1 tbsp olive oil
- 1/2 tsp Italian seasoning

Instructions
- Set the Instant Pot to ‘Sauté’ mode. Heat olive oil and sauté onions and celery until softened (3-4 minutes). Add garlic and cook for another minute.
- Add ground beef; brown for 5-6 minutes while breaking it up. Drain excess fat if necessary.
- Stir in tomato paste, then add diced tomatoes, beef broth, potatoes, Italian seasoning, salt, and pepper.
- Seal the lid and set to ‘Manual’ mode at high pressure for 8 minutes. Allow for a natural release of pressure for about 5 minutes before releasing any remaining pressure.
- Open the lid carefully, stir well, adjust seasoning if needed, and serve warm.
