Description

Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (110°F)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. In another bowl, whisk flour and salt together. Gradually add to the yeast mixture until combined.
  3. Knead the dough until smooth and elastic (about 5 minutes in a stand mixer or 8 minutes by hand).
  4. Mix in chopped rosemary and parmesan cheese, form into a ball, cover, and let rise for about 1 hour.
  5. Preheat oven to 425°F and line a baking sheet with parchment paper.
  6. Punch down the risen dough; divide it into eight pieces. Flatten each piece and place a cube of mozzarella in the center. Seal around the cheese.
  7. Roll each piece into a rope and shape into pretzels on the baking sheet.
  8. Boil water with baking soda; boil each pretzel for about 30 seconds using a slotted spoon. Drain on paper towels.
  9. Brush with melted butter and sprinkle with coarse sea salt before baking for 12-15 minutes until golden brown.
