  • 3 lbs organic chuck roast
  • 4 dried guajillo peppers
  • 4 dried ancho chiles
  • 1 onion
  • 4 garlic cloves
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese
  • Fresh cilantro
  • Pico de Gallo

Instructions

  1. Soak guajillo and ancho chiles in hot water for 15 minutes. Blend with onion, garlic, crushed tomatoes, beef stock, apple cider vinegar, bay leaves, and spices until smooth.
  2. Heat olive oil in a large pot over medium heat. Season chuck roast with salt and pepper; brown on all sides (5-7 minutes).
  3. Add the blended sauce to the pot and simmer on low heat for about 150 minutes until the beef is tender.
  4. Shred beef using two forks. Heat corn tortillas in a skillet until warmed through. Fill each tortilla with shredded beef and Oaxaca cheese; cook until crispy.
  5. Garnish with fresh cilantro and serve with Pico de Gallo on the side.
