  • 5 chicken thighs (skin on, bone in)
  • 12 lemons (zest + 4 tbsp juice)
  • 1 tbsp dried oregano
  • 4 garlic cloves (minced)
  • 1 small onion (finely diced)
  • 1 cup long grain rice (uncooked)
  • 1 ½ cups chicken broth
  • Olive oil
  • Salt and pepper

Instructions

  1. Marinate chicken in a ziplock bag with lemon zest, juice, oregano, garlic, salt, and olive oil for at least 20 minutes (or overnight).
  2. Heat olive oil in a large skillet or Dutch oven over medium heat. Sauté onion until soft; add garlic until fragrant.
  3. Brown marinated chicken thighs skin-side down for about 5 minutes per side.
  4. Remove chicken temporarily; add rice, broth, water, oregano, salt, pepper, lemon juice, and zest to the skillet. Stir well.
  5. Return chicken to the skillet on top of rice mixture. Cover and simmer on low heat for about 30 minutes until rice is tender.
  6. Let sit covered for five minutes before serving. Garnish with parsley or extra lemon zest if desired.
