- 1/4 cup bread flour
- 3 2/3 cups bread flour
- 1/3 cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1/3 cup whole milk (room temperature)
- 1/3 cup heavy cream
- 1 large egg (room temperature)
- Tangzhong (from recipe above)
- 1 teaspoon vanilla paste or extract
- 6 tablespoons unsalted butter (softened)
- 2/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup all-purpose flour
- 1 tablespoon granulated sugar
- 3 tablespoons unsalted butter (melted)
- 4 tablespoons unsalted butter (room temperature)
- 2 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 2 1/2 tablespoons heavy cream
Instructions
- Prepare the peach filling by combining cubed peaches, granulated sugar, lemon juice, cornstarch, and water in a bowl. Set aside.
- In a mixing bowl, combine warm water, bread flour, granulated sugar, instant yeast, and salt. Gradually mix in whole milk, heavy cream, egg, tangzhong, and vanilla extract until combined. Add remaining bread flour to form a soft dough and knead for 5 minutes.
- Let the dough rise in a greased bowl covered with a damp cloth until doubled (about 1 hour).
- Roll out the dough into a rectangle, spread softened butter on top, sprinkle brown sugar and cinnamon, then layer thinly sliced peaches. Roll tightly and slice into equal pieces.
- Place rolls in a greased baking dish to rise again (about 30 minutes), then bake at 350°F for about 30 minutes until golden brown.
- For the glaze, mix melted butter with cream cheese until smooth; add powdered sugar and heavy cream to reach desired consistency. Drizzle over warm rolls before serving.
