  • 1 (16 ounce) jar pepperoncini peppers, chopped
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Italian seasoning and red pepper flakes to taste

Instructions

  1. Pat chicken cubes dry; season with salt and pepper.
  2. Heat olive oil in a large skillet; cook chicken until browned (5-7 minutes). Remove and set aside.
  3. Sauté onion in the same skillet until translucent (about 5 minutes), then add garlic for another minute.
  4. Pour reserved pepperoncini juice into the skillet; add chopped peppers, broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
  5. Stir in heavy cream; return chicken to skillet and simmer until thickened (5 minutes).
