- 4 kiwis

- Toast the coconut in a skillet over medium-low heat until lightly browned, about 3-5 minutes. Set aside.
- Cube the pineapple and scoop out kiwi halves, cutting them into bite-sized pieces. Combine in a large bowl with finely sliced mint leaves.
- In a small bowl, zest and juice both limes, mixing with honey until well blended. Pour over the fruit and toss gently.
