- 1 box (3.4 oz) instant pistachio pudding
- 4 eggs
- 1/4 cup vegetable oil
- 2 tablespoons water
- 1 cup sour cream
- 3/4 cup halved maraschino cherries

- For the almond glaze: 2 cups powdered sugar
- 2–2½ tablespoons milk
- 1 teaspoon almond extract
Instructions
- Preheat your oven to 350°F (175°C). Grease two small loaf pans.
- In a large mixing bowl, combine the yellow cake mix and instant pistachio pudding. Add eggs, vegetable oil, water, and sour cream. Beat until smooth.
- Drain and pat dry maraschino cherries. Fold them gently into the batter before dividing it between the prepared loaf pans.
- Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
- For the glaze, whisk together powdered sugar, milk, and almond extract until smooth. Drizzle over cooled loaves.
