  • 812 medium roasting potatoes
  • 200g crumbled feta cheese
  • 3 tablespoons capers or sliced black olives
  • 2 large garlic cloves, sliced
  • 1 red onion, thinly sliced
  • Fresh rosemary sprig, torn
  • 1 lemon, cut into quarters
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200C (400F) and drizzle olive oil in a large skillet or roasting tray.
  2. Rinse and pierce the potatoes all over with a knife.
  3. Microwave the pierced potatoes covered for 7-12 minutes until tender.
  4. Transfer cooked potatoes to the skillet and gently smash each one.
  5. Drizzle with olive oil, season with salt and pepper, and top with garlic, rosemary, and lemon wedges.
  6. Roast for about 10 minutes until golden brown.
  7. Add crumbled feta, onions, and capers; return to roast for an additional 5 minutes.
  8. Squeeze fresh lemon juice over before serving.
