  • 120 grams powdered sugar
  • 2 large egg whites (room temperature)
  • 50 grams granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh raspberries
  • 2 tbsp granulated sugar (for syrup)
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter (room temperature)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a food processor, pulse almond meal and powdered sugar until fine; sift into a bowl.
  3. Whip egg whites until foamy; gradually add granulated sugar and beat until stiff peaks form.
  4. Gently fold dry ingredients into egg whites until the batter flows like lava.
  5. Pipe small rounds onto prepared sheets; let rest for 30 minutes until a skin forms.
  6. Bake for about 15 minutes; allow cooling completely.
  7. Prepare raspberry syrup by simmering fresh raspberries, granulated sugar, and lemon juice; strain and cool.
  8. Beat butter until fluffy; add cooled syrup and mix until light.
  9. Pipe buttercream onto half the macaron shells and sandwich with remaining shells.
