  • 1 ¼ cups water
  • ½ cup vegetable oil
  • 3 large eggs
  • 8 ounces softened cream cheese
  • 20 ounces vanilla melting wafers

Instructions

  1. Preheat the oven to 350°F. Grease a 9 x 13-inch cake pan and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine red velvet cake mix, water, vegetable oil, and eggs as per package instructions. Pour the batter into the greased pan and bake for 30-35 minutes until a toothpick comes out clean. Allow to cool completely.
  3. Crumble the cooled cake into fine crumbs in a bowl. Mix in softened cream cheese until well combined.
  4. Roll the mixture into balls (about 1.5 tablespoons each) and place on the prepared baking sheet. Refrigerate for 30 minutes.
  5. Melt vanilla melting wafers in intervals of 20-30 seconds in a microwave-safe bowl.
  6. Dip each chilled ball into melted wafers using a fork, allowing excess to drip off before placing back on the sheet. Top with sprinkles if desired.
