Ingredients
- 2 large salmon filets
- 8 ounces dried pasta
- 2/3 cup pesto (jarred or homemade)
- 1/4 cup grated Parmesan cheese
- 1–2 teaspoons olive oil
- 1 teaspoon lemon juice (from 1/2 lemon)
- Kosher salt
- Black pepper
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper and place the salmon filets on it. Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Roast the salmon in the cold oven for 20 minutes until flaky.
- While the salmon cooks, boil salted water in a large pot and cook the pasta according to package directions until al dente.
