- 2 ¼ cups graham cracker crumbs
- 5 tbsp white sugar
- 10 tbsp unsalted butter
- 32 oz cream cheese
- ¾ cup white sugar
- ½ cup liquid honey
- 1 tbsp vanilla
- ¾ tsp kosher salt
- 3 large eggs
- 2 large egg yolks
- ¾ cup heavy cream
- ¾ cup sour cream
- 1 tbsp cornstarch
- ½ cup full-fat sour cream
- ½ cup liquid honey
- ¼ – ½ tsp table salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
- Beat softened cream cheese until smooth; gradually mix in sugar, honey, vanilla, and salt. Add eggs one at a time followed by heavy cream, sour cream, and cornstarch until smooth.
- Pour filling over cooled crust and bake for about 90 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for an hour.
- For topping, mix sour cream, honey, and salt; spread over cooled cheesecake. Refrigerate for at least 4 hours before serving.
