  • 1 lb uncooked Italian sausage
  • 1 small white onion (thinly sliced)
  • 23 garlic cloves (minced)
  • 1 (8 oz) can tomato puree
  • 1 (14 oz) can crushed tomatoes
  • 13 cups chicken broth (to taste)
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped and softened)
  • ¼ cup grated parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onions until softened, about 4–5 minutes.
  2. Add sausage, breaking it up with a spatula. Cook until browned, then stir in minced garlic for another minute.
  3. Pour in tomato puree, crushed tomatoes, chicken broth, and basil. Bring to a boil, then reduce to simmer for 10–15 minutes.
  4. Stir in cream cheese and half of the parmesan until melted and smooth. Adjust thickness with more broth if needed.
  5. Season with salt and pepper to taste before serving hot, garnished with remaining parmesan and fresh parsley.
