- 2 cups butternut squash, peeled and diced
- 1 pound steak (sirloin or ribeye), cut into cubes
- 1 cup quinoa, rinsed
- 3 garlic cloves, sautéed
- ½ cup heavy cream or Greek yogurt
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced butternut squash with 1 tablespoon olive oil, salt, pepper, thyme, and rosemary. Spread on a baking sheet and roast for 25–30 minutes until golden brown.
- In a medium saucepan, bring 2 cups of water to boil. Add rinsed quinoa. Reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
- Heat a cast iron skillet over medium-high heat. Season steak cubes with salt and pepper; sear for 2–3 minutes on each side until browned. Let rest before slicing.
- Blend sautéed garlic with heavy cream or Greek yogurt, parsley, thyme, rosemary, and a pinch of salt until smooth.
- Assemble bowls by layering quinoa at the bottom, adding roasted squash on one side and steak on the other. Drizzle with garlic herb sauce.
