Savory Butternut Squash & Garlic Herb Steak Bowls are a delicious and nutritious meal perfect for cozy dinners or meal prep. This hearty dish features perfectly seared steak, sweet roasted butternut squash, and a creamy garlic herb sauce that ties everything together.


Ingredients

  • 2 cups butternut squash, peeled and diced
  • 1 pound steak (sirloin or ribeye), cut into cubes
  • 1 cup quinoa, rinsed
  • 3 garlic cloves, sautéed
  • ½ cup heavy cream or Greek yogurt
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced butternut squash with 1 tablespoon olive oil, salt, pepper, thyme, and rosemary. Spread on a baking sheet and roast for 25–30 minutes until golden brown.
  3. In a medium saucepan, bring 2 cups of water to boil. Add rinsed quinoa. Reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  4. Heat a cast iron skillet over medium-high heat. Season steak cubes with salt and pepper; sear for 2–3 minutes on each side until browned. Let rest before slicing.
  5. Blend sautéed garlic with heavy cream or Greek yogurt, parsley, thyme, rosemary, and a pinch of salt until smooth.
  6. Assemble bowls by layering quinoa at the bottom, adding roasted squash on one side and steak on the other. Drizzle with garlic herb sauce.
