  • 4 cups day-old cooked jasmine rice
  • 12 oz medium shrimp (peeled & deveined)
  • 6 oz crab meat (fresh or imitation)
  • 2 large eggs (beaten)
  • ½ cup carrots (finely diced)
  • ½ cup green peas
  • ½ cup red bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • Salt & black pepper to taste

Instructions

  1. Marinate shrimp and crab with soy sauce, sesame oil, garlic, ginger, lemon juice, and white pepper for 10–15 minutes.
  2. Chop vegetables into uniform pieces for even cooking.
  3. Heat wok over high heat; add vegetable oil until hot.
  4. Stir-fry marinated seafood for about 2–3 minutes until shrimp turns pink; remove from wok.
  5. Add garlic, ginger, and onion to the wok; sauté until fragrant.
  6. Stir in carrots, peas, and bell pepper; cook until crisp-tender.
  7. Push veggies aside, scramble eggs in the pan until soft curds form, then mix together.
  8. Add cold rice and break apart clumps while stirring vigorously.
  9. Pour in sauces; season with salt and pepper as needed.
  10. Return seafood to wok; toss everything together on high heat for another minute before serving.
