- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- ¾ cup frozen peas
- ½ cup milk

- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub and dry potatoes; prick with a fork.
- Rub potatoes with olive oil and salt; bake for 45–50 minutes until fork-tender.
- In a skillet, cook ground meat until browned. Add onion, carrots, and garlic; sauté until softened.
- Stir in broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Simmer for about 10 minutes.
- Mix mashed potatoes: scoop out baked potato flesh, mash with milk, butter, garlic powder, salt, and pepper.
- Assemble: fill each potato with meat mixture and top with mashed potatoes. Bake for an additional 10–15 minutes.
