  • 4 salmon fillets
  • 5 tbsp olive oil (divided)
  • 4 cups spinach (fresh or frozen)
  • 6 oz feta cheese (crumbled)
  • 1/3 cup Parmesan cheese (grated)
  • 1/4 cup roasted red peppers (chopped)
  • Salt and black pepper to taste
  • Italian seasoning
  • Paprika
  • Cayenne pepper
  • Garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Butterfly each salmon fillet carefully without cutting all the way through.
  3. In a mixing bowl, combine remaining olive oil, spinach, Italian seasoning, paprika, cayenne pepper, feta cheese, Parmesan cheese, roasted red peppers, and garlic powder. Mix well.
  4. Season the insides of the salmon fillets with salt and black pepper. Stuff each fillet generously with the filling.
