  • 1 cup kalamata olives, pitted and halved
  • 3 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1.5 tbsp olive oil
  • 4 tbsp olive oil
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup almonds, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tsp salt

Instructions

  1. Cook the orzo in salted boiling water for 8–10 minutes until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, and salt to create the dressing.
  3. In a large bowl, combine cooked orzo with arugula, chickpeas, feta cheese, olives, sun-dried tomatoes, chopped herbs, almonds, and red onion.
  4. Drizzle with dressing and toss gently to coat evenly. Serve immediately or chill in the refrigerator for enhanced flavor.
