Ingredients
- 4 cups beef broth
- 6 dried guajillo chiles
- 2 dried ancho chiles
- 3 lb beef stew meat
- 2 tbsp avocado oil
- 1 small yellow onion
- 1 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp sea salt
- 2 tsp garlic powder
- 2 dried arbol chiles
- 1/2 tsp black pepper
- 2 bay leaves
- 1/4 cup gluten-free all-purpose flour
Instructions
- Remove stems and seeds from dried chiles and toast them in a skillet for 1-2 minutes until fragrant.
- In a blender, combine toasted chiles with beef broth, ground cumin, oregano, garlic powder, and sea salt. Blend until smooth.
- Sauté chopped onion in avocado oil until transparent (about 5 minutes).
- Brown the beef chunks in the same skillet for 5-7 minutes.
- Transfer the beef and onions to a slow cooker and pour the blended sauce over it. Add black pepper and bay leaves.
- Cover and cook on low for about 4 hours or until the meat is tender.
