  • 4 cups beef broth
  • 6 dried guajillo chiles
  • 2 dried ancho chiles
  • 3 lb beef stew meat
  • 2 tbsp avocado oil
  • 1 small yellow onion
  • 1 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp sea salt
  • 2 tsp garlic powder
  • 2 dried arbol chiles
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1/4 cup gluten-free all-purpose flour

Instructions

  1. Remove stems and seeds from dried chiles and toast them in a skillet for 1-2 minutes until fragrant.
  2. In a blender, combine toasted chiles with beef broth, ground cumin, oregano, garlic powder, and sea salt. Blend until smooth.
  3. Sauté chopped onion in avocado oil until transparent (about 5 minutes).
  4. Brown the beef chunks in the same skillet for 5-7 minutes.
  5. Transfer the beef and onions to a slow cooker and pour the blended sauce over it. Add black pepper and bay leaves.
  6. Cover and cook on low for about 4 hours or until the meat is tender.
