Ingredients
- 3 pounds beef chuck roast (cut into 1-inch cubes)
- 2 tablespoons olive oil
- 1 large yellow onion (diced)
- 2 tablespoons tomato paste
- 2 cans fire-roasted diced tomatoes
- 1 can tomato sauce
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- Salt and black pepper to taste
Instructions
- Sear the beef in olive oil in a large skillet over medium-high heat until browned on all sides. Transfer to the slow cooker.
- In the slow cooker, combine diced onion, tomato paste, fire-roasted tomatoes, tomato sauce, beef broth, chili powder, smoked paprika, ground cumin, salt, and pepper. Mix well.
- Cover and cook on low for 7–8 hours or high for 3–4 hours. About 30 minutes before serving, stir in masa harina or cornmeal to thicken.
