Ingredients
- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 large yellow onion
- 2 tablespoons tomato paste
- 2 (14.5 ounce) cans fire-roasted diced tomatoes
- 1 (8 ounce) can tomato sauce
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Sear the beef in olive oil in a large skillet over medium-high heat until browned on all sides. Transfer to a slow cooker.
- In the slow cooker, add diced onion, tomato paste, fire-roasted tomatoes, tomato sauce, and beef broth.
- Stir in chili powder, smoked paprika, ground cumin, oregano, salt, pepper, brown sugar, and Worcestershire sauce until well combined.
- Cover and cook on low for 7-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in masa harina or cornmeal to thicken.
