- 1/2 cup water
- 2 tsp dry active yeast
- 410 grams bread flour (2 1/2 cups plus 3 tbsp)
- 1/3 cup packed brown sugar
- 1 tsp salt
- 2 tbsp baking soda (for boiling)
- Coarse pretzel salt (for topping)
Instructions
- In a large mixing bowl, combine warm water, whole milk, and dry yeast. Allow to sit for 5 minutes until frothy.
- Stir in brown sugar, salt, and melted butter. Gradually add bread flour and baking powder until dough forms.
- Knead on a floured surface for 5โ7 minutes until smooth. Let rise in a greased bowl covered with a towel for about 30 minutes or until doubled.
- Preheat oven to 450ยฐF (232ยฐC). Shape the risen dough into pretzels by rolling into ropes and twisting.
- Boil each shaped pretzel in warm water mixed with baking soda for about 30 seconds, then place on a parchment-lined baking sheet.
- Brush with melted butter, sprinkle with coarse salt, and bake for approximately 8 minutes until golden.
