  • 1 tablespoon fresh ginger, grated
  • 4 burger buns (preferably brioche)
  • 1 cup green cabbage, finely shredded
  • 1 cup carrots, julienned
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha (optional for extra heat)
  • Fresh cilantro, for garnish
  • Sesame seeds, for garnish
  • Oil for cooking (canola or vegetable)

Instructions

  1. In a medium bowl, mix gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper to make the marinade.
  2. Marinate the chicken thighs in this mixture for at least one hour or overnight in the refrigerator.
  3. While marinating, prepare the crispy slaw by combining cabbage and carrots in a large bowl. In another bowl, whisk together mayonnaise and lime juice; add to the cabbage mix and toss well.
  4. Preheat a grill pan over medium-high heat and cook marinated chicken for about 6–7 minutes per side or until it reaches an internal temperature of 165°F (75°C).
  5. Toast the burger buns until golden brown. Assemble each sandwich by placing sliced chicken on the bun’s bottom half and topping generously with crispy slaw.
