  • 1 pound large mushrooms (Cremini or Portobello)
  • 2 tablespoons olive oil
  • 1 cup cooked chicken (diced or shredded)
  • 1/2 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 5 ounces fresh spinach (roughly chopped)
  • 4 ounces cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (Panko preferred)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems; chop stems for the filling.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until softened, then add garlic and chopped mushroom stems; cook until browned.
  3. Add spinach to the skillet in batches until wilted. Transfer mixture to a bowl, then mix in cream cheese, chicken, Parmesan, mozzarella, breadcrumbs, salt, and pepper.
  4. Spoon filling into each mushroom cap. Top with extra breadcrumbs and Parmesan.
  5. Bake for 20–25 minutes until golden brown and heated through.
