Ingredients
- 1 pound large mushrooms (Cremini or Portobello)
- 2 tablespoons olive oil
- 1 cup cooked chicken (diced or shredded)
- 1/2 medium yellow onion (finely chopped)
- 3 cloves garlic (minced)
- 5 ounces fresh spinach (roughly chopped)
- 4 ounces cream cheese (softened)
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs (Panko preferred)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems; chop stems for the filling.
- In a skillet, heat olive oil over medium heat. Sauté onion until softened, then add garlic and chopped mushroom stems; cook until browned.
- Add spinach to the skillet in batches until wilted. Transfer mixture to a bowl, then mix in cream cheese, chicken, Parmesan, mozzarella, breadcrumbs, salt, and pepper.
- Spoon filling into each mushroom cap. Top with extra breadcrumbs and Parmesan.
- Bake for 20–25 minutes until golden brown and heated through.
