- 4 large Portobello mushrooms
- 2 tablespoons olive oil
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ½ cup ricotta cheese
- ¼ cup cream cheese, softened
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup breadcrumbs (optional)
- Fresh parsley, chopped
- Extra Parmesan cheese for sprinkling
Instructions
- Preheat your oven to 375°F (190°C). Clean mushrooms and remove stems and gills.
- Brush mushrooms with olive oil, season with salt and pepper, and bake for 5–7 minutes.
- Sauté garlic in olive oil; add spinach until wilted. Combine with ricotta, cream cheese, half mozzarella, Parmesan, and seasonings.
- Stuff each mushroom cap with the filling; top with remaining mozzarella.
- Bake for 10–12 minutes until melted; broil for an extra golden finish if desired.
