Ingredients
- 12 oz rigatoni pasta
- 2 tbsp extra virgin olive oil
- 1 lb sirloin or ribeye steak (cut into bite-sized pieces)
- 1 medium onion (diced)
- 1 medium bell pepper (diced)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup crumbled blue cheese
- 1 tsp dried oregano
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cup shredded mozzarella cheese
- 0.25 cup fresh parsley (chopped)
Instructions
- Preheat oven to 375°F (190°C). Cook rigatoni in salted boiling water until al dente, about 10-12 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium-high heat. Sear steak pieces until browned, about 3-4 minutes. Remove from skillet and set aside.
- In the same skillet, sauté onion and bell pepper until softened (about 5 minutes). Add garlic and cook for an additional minute.
- Lower heat; add heavy cream, deglazing the pan. Stir in blue cheese, oregano, salt, and pepper until melted and slightly thickened.
- Return steak to skillet; combine with rigatoni until coated with sauce.
- Transfer to a greased baking dish; top with mozzarella cheese.
- Bake for 15-20 minutes until cheese is melted and golden brown.
- Garnish with parsley before serving.
