  • 2/3 c. sliced freeze-dried strawberries (pureed into powder)
  • 3/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. kosher sea salt
  • 2/3 c. full-fat sour cream (or whole milk Greek yogurt)
  • 1/2 c. whole milk
  • 2/3 c. diced strawberries (about 1/8-inch in size)
  • 1 c. unsalted butter (room temperature)
  • 1 c. freeze-dried strawberries (pureed into powder)
  • 3 1/2 c. powdered sugar
  • 3 tbsp. cooked strawberry puree
  • 2 oz. white chocolate (melted and at room temperature)
  • 1/4 cup whole milk (at room temperature)
  • 1/2 tsp. vanilla extract
  • 1/8 tsp. kosher sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together unsalted butter and granulated sugar until light and fluffy. Add egg whites one at a time, followed by vanilla.
  3. In a separate bowl, whisk together dry ingredients; gradually combine with the wet mixture alternating with sour cream and milk. Fold in diced fresh strawberries.
  4. Fill cupcake liners with batter and bake for 18-22 minutes until set. Cool on wire racks.
  5. For frosting, beat butter until smooth, add powdered strawberries, then gradually mix in powdered sugar, strawberry puree, white chocolate, milk, vanilla, and salt until fluffy.
  6. Frost cooled cupcakes and top with fresh strawberries if desired.
