  • ½ cup unsweetened cocoa powder
  • 1 ½ cups sugar (divided)
  • 1 ½ cups egg whites (at room temperature)
  • 2 cups heavy whipping cream
  • 1 pound fresh strawberries (diced)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sift together cake flour, cocoa powder, and half the sugar in one bowl.
  3. In another bowl, beat egg whites until frothy; add cream of tartar and salt until soft peaks form.
  4. Gradually mix in remaining sugar until stiff peaks form; gently fold in vanilla and almond extracts.
  5. Carefully combine dry ingredients with the egg mixture using a rubber spatula.
  6. Pour batter into an ungreased 9-inch round cake pan and bake for approximately 35 minutes until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely before removing from the pan.
  8. Whip heavy cream with sugar and vanilla until stiff peaks form.
  9. Cut the cooled cake into cubes and layer in parfait glasses with whipped cream and diced strawberries.
