  • 1 can (15 oz) black beans, rinsed and drained
  • 1 ripe avocado, diced
  • 1 cup corn (fresh, frozen, or canned)
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • ½ cup Greek yogurt (or dairy-free alternative)
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce sweet potatoes several times with a fork and place on a baking sheet.
  3. Bake for about 45–60 minutes until fork-tender.
  4. Allow to cool slightly, then slice each potato in half lengthwise and scoop out some flesh.
  5. In a mixing bowl, combine black beans, avocado, corn, cherry tomatoes, red onion, cilantro; season with salt and pepper.
  6. In another bowl, whisk together Greek yogurt, lime juice, cilantro, and salt until smooth.
  7. Spoon the filling into sweet potato halves and drizzle with cilantro lime crema.
  8. Garnish with extra cilantro if desired and serve warm.
