  • 3 lbs short ribs
  • 1 cup red wine (Cabernet Sauvignon recommended)
  • 1 large onion
  • 4 cloves garlic
  • 2 lbs potatoes (Yukon Gold or Russet)
  • 4 tablespoons unsalted butter
  • ½ cup whole milk
  • Fresh herbs (thyme, rosemary)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season short ribs with salt and pepper, then sear in a Dutch oven until browned on all sides.
  3. Sauté chopped onions until soft, then add minced garlic.
  4. Deglaze the pot with red wine, simmer for about 5 minutes.
  5. Return short ribs to the pot with fresh herbs and enough water or stock to cover half of the ribs. Cover and braise for about 3 hours.
  6. Meanwhile, boil peeled and chopped potatoes until tender. Drain and mash with butter and milk until creamy.
  7. Serve short ribs over mashed potatoes.
