- 1.5 lbs sauerkraut
- 1/4 cup brown sugar
- 1.5 cups apple slices (about 2 medium apples)
- 1 bag wide egg noodles
- Salt and black pepper to taste
- 1.5 tbsp high-heat oil (vegetable or avocado oil)
- 2.5 tbsp chicken soup base
- 2 garlic cloves (finely minced)
- 1 cup water
- 1/2 yellow onion (diced into 1/2-inch pieces)
- 2 tbsp unsalted butter (Kerrygold for richness)
- Fresh parsley (chopped, about 2 tbsp)
Instructions
- Gather all ingredients on a clean surface.
- In a Dutch oven, heat high-heat oil over medium-high heat. Season pork with salt and pepper, then sear until browned on all sides (about 3-4 minutes per side).
- Remove pork temporarily and add sauerkraut, chicken soup base, brown sugar, minced garlic, apple slices, diced onion, water, salt, and pepper to the pot. Stir well.
- Return the seared pork to the pot on top of the sauerkraut mixture.
- Cover and simmer on low heat for about 90 minutes.
- Cook egg noodles according to package instructions about 10 minutes before serving; drain well.
- Slice the pork and serve over noodles with sauerkraut mixture on top. Garnish with fresh parsley.
