  • 2.5 lb pork loin roast
  • 1.5 lbs sauerkraut
  • 1/4 cup brown sugar
  • 1.5 cups apple slices (about 2 medium apples)
  • 1 bag wide egg noodles
  • Salt and black pepper to taste
  • 1.5 tbsp high-heat oil (vegetable or avocado oil)
  • 2.5 tbsp chicken soup base
  • 2 garlic cloves (finely minced)
  • 1 cup water
  • 1/2 yellow onion (diced into 1/2-inch pieces)
  • 2 tbsp unsalted butter (Kerrygold for richness)
  • Fresh parsley (chopped, about 2 tbsp)

Instructions

  1. Gather all ingredients on a clean surface.
  2. In a Dutch oven, heat high-heat oil over medium-high heat. Season pork with salt and pepper, then sear until browned on all sides (about 3-4 minutes per side).
  3. Remove pork temporarily and add sauerkraut, chicken soup base, brown sugar, minced garlic, apple slices, diced onion, water, salt, and pepper to the pot. Stir well.
  4. Return the seared pork to the pot on top of the sauerkraut mixture.
  5. Cover and simmer on low heat for about 90 minutes.
  6. Cook egg noodles according to package instructions about 10 minutes before serving; drain well.
  7. Slice the pork and serve over noodles with sauerkraut mixture on top. Garnish with fresh parsley.
