- 2 cloves garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 10 oz ground chicken
- ¼ cup Tamari (or soy sauce)
- 2 tablespoons Thai sweet red chili sauce
- Juice of 1 lime
- â…“ cup cashews (chopped)
- Butter lettuce leaves (for wrapping)
Instructions
- Heat sesame oil in a non-stick frying pan over medium-high heat. Sauté onions for 2–3 minutes until browned, then add garlic and ginger; cook for an additional 2 minutes.
- Add ground chicken, breaking it apart as it cooks. Season with salt and pepper, cooking until golden brown, about 3–4 minutes.
- In a bowl, mix Tamari, Thai chili sauce, lime juice, and maple syrup. Pour this over the chicken along with chopped cashews; stir well and cook on low for another 2 minutes.
- Remove from heat and mix in shredded carrots, scallions, and cilantro.
- To serve, spoon the mixture into butter lettuce leaves and top with sesame seeds if desired.
