  • 3/4 cup heavy whipping cream
  • 6 oz raspberries
  • 4.4 oz white chocolate (plus extra for topping)
  • 2 eggs
  • 3/4 cup sugar (divided)
  • 1/4 cup dark brown sugar
  • 5 Tbsp butter (melted)
  • 1 tsp vanilla
  • 2 tbsp plain yogurt
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp corn starch
  • 1/2 cup white granulated sugar
  • 1 Tbsp lemon juice
  • 1/2 Tbsp cornstarch (mixed with a splash of cold water)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and brown sugar, then press into a springform pan.
  2. Melt white chocolate and drizzle it over the crust.
  3. In a bowl, beat cream cheese until smooth, then mix in heavy cream, yogurt, eggs, vanilla extract, corn starch, and sugar.
  4. Prepare raspberry mixture by cooking raspberries with sugar and lemon juice until soft, then thicken with cornstarch.
  5. Layer cheesecake filling and raspberry swirl in the pan before baking for about 85 minutes.
  6. Allow cooling gradually in the oven before chilling for at least six hours or overnight.
