Ingredients
- 1 1/2 cups graham cracker crumbs
- 24 oz cream cheese (softened)
- 3/4 cup heavy whipping cream
- 6 oz raspberries
- 4.4 oz white chocolate (plus extra for topping)
- 2 eggs
- 3/4 cup sugar (divided)
- 1/4 cup dark brown sugar
- 5 Tbsp butter (melted)
- 1 tsp vanilla
- 2 tbsp plain yogurt
- 1 tsp vanilla extract
- 1 1/2 Tbsp corn starch
- 1/2 cup white granulated sugar
- 1 Tbsp lemon juice
- 1/2 Tbsp cornstarch (mixed with a splash of cold water)
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and brown sugar, then press into a springform pan.
- Melt white chocolate and drizzle it over the crust.
- In a bowl, beat cream cheese until smooth, then mix in heavy cream, yogurt, eggs, vanilla extract, corn starch, and sugar.
- Prepare raspberry mixture by cooking raspberries with sugar and lemon juice until soft, then thicken with cornstarch.
- Layer cheesecake filling and raspberry swirl in the pan before baking for about 85 minutes.
- Allow cooling gradually in the oven before chilling for at least six hours or overnight.
